Karpathos (or Karpathos, as it is called in literature) is the second largest island in the Dodecanese. It seems so distant and inaccessible, squeezed between Crete and Rhodes in the southwestern part of the Aegean Sea. Its approximately 6000 inhabitants are largely used in agriculture and sheep farming: meats, cheeses and vegetables are of excellent quality so much so that Karpathian cuisine is considered one of the best in Greece. Only a few years ago, the inhabitants of Karpathos, thanks to the modernization of its small airport, considered tourism as an important economic resource.
